Raspberry Cheesecake in a Glass

Cheesecake in a Glass! Ooh la la!

Ingredients

  1. 100 grams toasted Almond Flour
  2. 2 tsp Cinnamon
  3. 1/2 tsp Allspice
  4. 1 1/2 tbsp powdered Stevia
  5. 8 oz softened Philadelphia Cream Cheese
  6. 500 ml whipping cream
  7. 2 packages "Whip It" stabilizer
    Whip it
  8. Whipped Cream (optional)
  9. Berry Sauce made with Raspberries

Instructions

Follow the Berry Sauce recipe, using raspberries (fresh or frozen).

Combine Almond flour, sweetener, Cinnamon and Allspice in a frying pan.
On a low heat stir constantly until golder brown.
DO NOT LEAVE UNATTENDED AS IT CAN BURN VERY QUICKLY!!!

Put about 90% of the Almond flour mixture evenly into 4 wine or Martini glasses.

In a bowl mix the whipping cream, sweetener and Whip It until stiff.
Add cream cheese and mix thoroughly. Make sure you have no lumps!

Divide the berry sauce in half and layer in each glass over the Almond flour base.
Divide the cream cheese mixture in half and distribute equally into each glass as a third layer.
Mix the remaining berry sauce and cream cheese mixtures together and layer evenly into each glass for your fourth layer.

Sprinkle with remaining Almond flour mixture.
Add Whipped Cream if desired (and who doesn't?)

Notes
Sweeten to taste, keeping in mind you can always add more but you can't take it back!
