Protein Bread

This protein bread is an excellent choice if you can't give up bread!

Ingredients

  1. 12 oz Cream Cheese
  2. 1/4 cup butter
  3. 4 eggs
  4. 2 drops Stevia liquid sweetener
  5. 1/4 cup whipping cream
  6. 1/4 cup olive oil
  7. 1 2/3 cup unflavored whey protein (zero carb if possible)
  8. 1/2 tsp salt
  9. 1/3 tsp baking soda
  10. 1 tsp xanthan gum
  11. 2 1/2 tsp baking powder
  12. 1/4 tsp cream of tartar

Instructions

Preheat oven to 325 F. Grease a 9 x 5 bread pan.
Microwave the cream cheese and butter in large microwave safe dish for 1 minute.
Blend the cream cheese and butter with a hand mixer or immersion blender.
Add the eggs, sweetener, heavy cream, and olive oil to the butter and cream cheese, and blend well.
Combine the dry ingredients in a separate bowl.
Add dry ingredients to cream cheese mixture and stir well with a spatula. Don't overmix it!
Pour into bread pan and bake at 325 F for 45 minutes (until golden brown).

Notes
The choice of Whey protein can really change the outcome of this bread.
