Broccoli Medley

Broccoli with Red Pepper and Mushrooms. Colourful and yummy!

Ingredients

  1. 1 lb Broccoli spears
  2. 200 grams Mushrooms
  3. 1 Red Pepper, sliced
  4. 5 strips Bacon
  5. Salt & Pepper
  6. Paprika
  7. Extra Virgin Olive Oil

Instructions

Cut the Red Pepper into slices.
Cut the Bacon into small pieces.
Optionally slice the Mushrooms. If they're not very big leave them whole.
Cover a cookie sheet with aluminum foil and layer the Broccoli, Mushrooms, Red Pepper and Bacon on the cookie sheet.
Drizzle liberally with Olive Oil, then sprinkle with Paprika, Salt & Pepper.

Broil on the second highest rack in your oven for about 7 minutes. Turn them over with a spatula and continue broiling for another 5 to 7 minutes. Watch closely as they will cook very fast on broil!

Notes
This is a quick, colourful and easy side dish.
If you want to substitute Cauliflower for the Broccoli it may take a little longer to cook, so plan accordingly and keep a close eye on it!
