Bean Salad

Beans and Bacon. Any questions?

Ingredients

  1. 1 package French cut Green Beans
  2. 10 strips of bacon, crumbled
  3. 1 tbsp mustard
  4. 1 tbsp mayo or whipping cream
  5. 1/2 onion, diced
  6. Fresh herbs (parsely or chives)
  7. 1/2 cup Oil & Vinegar Dressing

Instructions

Line a cookie sheet with tinfoil and lay out the strips of bacon.
Turn the oven to broil and put the bacon on the top rack.
Set a timer for 5 minutes to check on / turn the bacon.
Keep a close eye on the bacon as it can burn very easily on such a high heat.

Cook beans in salt water until slightly tender (about 5 minutes). Don't overcook!
Drain the beans.
In a salad bowl mix the Oil & Vinegar dressing with the mayonnaise (or cream) and the mustard. Add the onion and herbs and mix well.
While the beans are still warm, add them and the crumbled bacon to the salad bowl and mix well.
Let stand for at least 2 hours before serving. The longer the better.

Notes
Costco has pre-cooked bacon that you can put in the microwave for about 2 minutes. Quick & easy!
This is a great replacement for potato salad!
