Smoked Fish Pasta

This low-carb pasta dish is comfort food at it's finest.

Ingredients

  1. 300 - 500 grams Smoked Fish (Salmon, Pickerel, whatever you like)

  2. 1 cup thinly sliced mushrooms (optional)

  3. 1 Package NuPasta noodles (or Konjac noodles if you prefer)
    NuPasta Noodles

  4. 200 ml whipping cream

  5. 1 Zucchini, thinly sliced

  6. 1 cup Broccoli, chopped into small pieces

  7. 2 tsps Knorr soup stock (to taste)
    Knorr Soup Mix

  8. 1 tbsps Butter

  9. Salt & Pepper

Instructions
Drain and rinse the NuPasta (or Konjac) noodles.
Cut the smoked fish into small pieces.
In a large frying pan, melt the butter and add the mushrooms, zucchini and broccoli.
Fry for about 5 minutes, or until tender.
Add the noodles and smoked fish and mix well.
Add the whipping cream and soup stock, mix well again.
Cook on high for about 5 minutes, or until the cream sauce starts to thicken.
Add salt & pepper to taste.

Notes
Freshly grated parmesan on top takes this dish to the next level.
Not a fan of fish? Any smoked meat can be substituted in place of the fish.
