Quesadillas

Low carb quesadillas using leftovers! Too easy!

Ingredients

  1. Leftover meat (steak, chicken), thinly sliced
  2. Shredded cheese
  3. Mushrooms, diced (optional)
  4. 2 tbsps Extra Virgin Olive Oil
  5. 2 to 4 Low-carb Tortilla shells

Instructions
Heat the Olive Oil in a frying pan.
Put a layer of sliced meat down the middle of each tortilla shell.
Add a layer of diced mushrooms (optional).
Cover with shredded cheese and fold each tortilla in half.

Don't overfill the tortillas or you will have a difficult time frying them!

Place in frying pan and fry for 2 to 3 minutes until the shell begins to brown.
Flip over and fry the other side for 2 to 3 minutes as well.
The cheese should be pretty well melted at this point.

Serve with full fat sour cream and low carb salsa.

Notes
Your kids will love it!
You can also use these tortilla shells to make pizza, just cover the tortilla shell with your ingredients and bake in the oven on a cookie sheet!
