Pizza Schnitzel

Pizza using Schnitzel as the crust!

Ingredients

  1. 2 or 3 leftover cutlets from the Jaeger Schnitzel recipe
  2. Cheese of your choice
  3. Pizza toppings you like (Roasted Red Peppers, Sundrried Tomatoes, Artichoke Hearts, etc.)
  4. 10 - 12 Asparagus spears
  5. Extra Virgin Olive Oil

Instructions
This recipe is part of the "Cook once, eat three times" idea and assumes you have leftover schnitzel from the Jaeger Schnitzel recipe.

Grease a cookie sheet and lay out the cutlets.
Cover with cheese and the other toppings.
Add the asparagus spears to one side of the cookie sheet and drizzle with Olive Oil.
Broil on high for 5 to 8 minutes. Watch closely!

Notes
For a gourmet presentation, drizzle with Balsamic glaze!
