Low carb spin on a classic!

Ingredients

  1. 1 lb ground beef
  2. 1 lb ground pork (or sausage)
  3. 1 package Egg Thins
    Egg Thins
  4. Raos Low Carb Spaghetti Sauce
    Low Carb Spaghetti Sauce
  5. 500 grams Ricotta cheese
  6. 2 egg yolks
  7. 1 package of frozen Spinach (optional)
  8. Shredded cheese to cover the top
  9. Salt & Pepper to taste

Instructions

Fry the pork and beef and set aside.
Mix egg yolks with Ricotta cheese and set aside.
Pour enough Raos sauce to lightly cover the bottom of a baking dish.
Add a layer of Egg Thins, then a layer of the Ricotta cheese mixture.
Add a layer of spinach if desired, but make sure it is very well drained.
Add a layer of pork and beef and cover with Raos saucee.
Repeat the layers once more (or twice if you have enough ingredients) and cover with shredded cheese.

Bake at 360 degrees between 45 and 60 minutes.

Notes
The more layers you add the longer it will take to cook so plan accordingly.

I've tried zucchini and other noodle substitutes over the years and none of them come as close as this version to tasting like the original Lasagna.
