Preheat your oven to 350 degrees.
Butterfly the chicken breasts and insert a slice of ham and slice of cheese inside each breast.
Use toothpicks to hold the chicken breast together.
On one large plate pour the ground pork rinds.
On another plate mix the egg with a fork.
Dip each chicken breast in the egg, making sure to cover both sides.
Immediately roll the chicken breast in the pork rinds, coating well on both sides.
Use an oven-safe pan and fry on the stove to crisp the breading on both sides.
Transfer the pan to the oven and bake for approximately 15 minutes.
Don't forget to remove the toothpicks before you serve it!
Notes
You could also use pork cutlets in place of the chicken breast.
Make extra ground pork rinds and keep them in the freezer for later use.
