Blue Cheese Crusted Filet

The tenderest Beef with a Blue Cheese crust! Crazy good!

Ingredients

  1. 2 6 oz pieces of beef tenderloin, about 1 inch thick
  2. 1/2 package Whisps
    whisps
  3. 1 package Pork rinds
    pork rinds
  4. 3 tbsps Almond flour
  5. Paprika to taste
  6. Pepper to taste
  7. 1/4 cup Extra Virgin Olive Oil
  8. Butter
  9. Blue Cheese, crumbled

Instructions
Put the Whisps and Pork Rinds in a blender / food processor and blend until you get a coarse mixture. Alternatively you can put them in a plastic bag and roll them with a rolling pin.

On a large plate mix the ground Whisps / Pork Rinds with Paprika, Almond flour and pepper.
Home made breadcrumbs

In a small bowl combine equal parts of the breadcrumb mixture, Blue Cheese and Butter. Mix well until you get a thick, paste like consistency. Set aside.

Prepare a cookie sheet by covering with aluminum foil, and set it aside.

Heat the Olive Oil in a frying pan and fry the meat how you like it. For beef tenderloin I recommend no more than medium rare, but everyone has their own ideas about that!

Remove the beef from the pan and put it on the cookie sheet. Press the blue cheese mixture evenly over the beef so you have a nice thick layer on each piece.

Put in the oven on broil until the Blue Cheese mixture starts to brown. Keep an eye on it as it doesn't take very long at that heat!

Let it rest for a few minutes before serving.

Notes
When you make the "breadcrumb" mixture, make extra and freeze it. It's a great breading for pork, chicken and fish, and works very well in hamburgers too!
