A delightfully light and moist coconut cake!

In a medium sized bowl combine the cream cheese, butter and 2 cups of sweetener. Mix well with an electric mixer.
Add eggs.
Mix until fully blended.
Add Coconut flour, baking powder and salt.
Mix well ensuring there are no lumps in the batter.
In a separate bowl mix the coconut flakes with 1/2 cup of sweetener.
Preheat oven to 350 degrees.
Line a bread loaf pan with parchment paper, then spray or grease the parchment paper.
Pour 1/2 of the batter into pan. Add 1/2 of the coconut flakes evenly over the batter. Add the remaining batter to the pan, then evenly spread the remaining coconut flakes for your final layer.
Bake between 50 and 60 minutes.
