Chocolate chips and Almond butter! Delicious!
Ingredients
Instructions
Combine the egg, sweetener, baking soda, collagen and vanilla in a bowl.
Add the almond butter and chocolate chips and mix well.
Line a cookie sheet with parchment paper and spray the parchment with cooking spray.
Form the dough into balls about the size of a golf ball and press down slightly on the cookie sheet.
Bake at 350 degrees for about 10 minutes.
Notes
Adding Cinnamon and Allspice is an excellent way to hide the flavour of sweetener if so desired.
These are a great cookie replacement when you want a little bit of a treat, but also make a great protein snack to hold you over if you're feeling a little peckish!
You can freeze the dough for later use so feel free to double or triple the recipe, pre-form the balls, and save yourself some time later on.
For an added twist make a mixture of coconut flakes and sweetener to taste (Swerve or similar) and roll each ball in the mixture before you flatten them on the cookie sheet.
The dough can be easier to work with if you chill it.
