Ice Cream Parfait with Caramel/Chocolate Sauce! Because, why not!?
Ingredients
Homemade Ice Cream - or Halo low-carb ice cream
1 cup Butter
2 cups Whipping Cream
1 cup Swerve Brown Sugar substitute
Lily's Chocolate Chips (or any sugar free chocolate)
Instructions
Follow the instructions to make your own home made Ice Cream or buy some low carb ice cream like Halo.
Melt the butter and brown sugar in a sauce pan.
Bring to a slight boil and simmer for 5 minutes, but do NOT stir it.
Add the whipping cream and mix well, making sure it doesn't separate.
Let simmer for another 5 minutes and do NOT stir it.
Keep a close eye on it as it likes to boil over!
Pour half of the sauce into a glass container (nothing plastic) and set aside. This is your caramel sauce.
Add desired amount of chocolate to the sauce pan and stir until the chocolate melts.
Serve the ice cream with caramel or chocolate sauce, or both!
Top with whipped cream if desired.
Notes
For some added variety you can add salt to the caramel sauce to make salted caramel.
You could also add pecans to either sauce if you like nuts.
Or add of bit of chili powder to the chocolate sauce if you're into sweet heat!
