Berry Coffee Cake

A yummy spin on the classic coffee cake!

Ingredients

  1. 2 cup Stevia powdered sweetener
  2. 2/3 cup Coconut flour
  3. 1/2 cup Butter
  4. 8 eggs
  5. 1/2 tsp salt
  6. 1 tsp Vanilla extract
  7. 8 ounces Cream Cheese at room temperature
  8. 2 tsps Baking Powder
  9. 1 tsp Cinnamon
  10. 1 cup frozen Berries (Blueberries, Raspberries or Blackberries)

Instructions

In a medium sized bowl combine the cream cheese, butter and sweetener. Mix well with an electric mixer.
Add eggs.
Mix until fully blended.
Add Coconut flour, cinnamon, baking powder and salt.
Mix well ensuring there are no lumps in the batter.

Preheat oven to 350 degrees.

Line a spring form pan with parchment paper, then spray or grease the parchment paper.

Pour the batter into pan.
Pour the frozen berries over top of the batter. They will sink into the batter.

Bake between 45 and 55 minutes.

Serve with Whipped Cream if desired.

Notes
If you don't like the taste of Stevia or Monkfruit (or other sweetener), the cinnamon and vanilla will disguise that taste.
