No Bake Berry Cheesecake

A light berry cheesecake. Always a hit!

Ingredients

Base

  1. 1/3 cup butter
  2. 1 3/4 cup Almond flour
  3. 1 tsp Vanilla extract
  4. 3 tbsp Stevia sweetener

Topping

  1. 500 grams of your choice of frozen or fresh berries
  2. 500 ml whipping cream
  3. 2 packages of "Whip it" stabilizer

  4. 1 package of No Sugar Added Jell-O in your berry flavour of choice
  5. 2 8 oz packages of full fat cream cheese
  6. 1 1/2 cup Stevia sweetener

Instructions

In a medium sized bowl mix together the base ingredients.
Mix with an electric mixer, ensuring there are no lumps in the batter.

Spray or grease a 25 cm spring form pan and push the batter into the pan, making sure you push the batter out to the edges of the spring form pan.

Use half of the berries and make a fruit layer on the base.

Mix Jell-O powder with 200 ml boiling water and set aside.

Whip the room temperature cream cheese with the sweetener. Add the whipping cream and "Whip it" to the mixture and mix until it stiffens.
Add the rest of the fresh berries, then slowly add the Jell-O to the mixture.
Put the mixture in the refrigerator for about 20 minutes.

Pour the topping mixture evenly into the spring form pan. Place in refrigerator overnight.
Optionally, decorate with berries of your choice.

Notes
You can use just the side of the spring form pan and put it on a flat cake platter.
Be sure to let the topping cool before you pour it onto the base though, or it may run out the bottom and all over your counter!
